The evolution of gluten free flours over the last few years has been staggering. There was a time when Melinda's home pantry was filled with bags of every flour type she could find, as she tried desperately to simulate that magical wheat that seems to make anything.
So, she narrowed it down, tried to remove as many common allergens as possible, and came up with the five main flours used at Melinda's Gluten Free Bakery:
Rather than using different flours to achieve different textures, she made separate blends of the above five for each type of item. When it comes to food allergies, simple is better!

Typically we need 48 hours advanced notice for a simple order (donuts, cup cakes, muffins, pizza crust, etc... )
Buttery Croissants are a special treat and require a FIVE DAY notice for special order.

Unfortunately, we are no longer making deli-style sandwiches, and cannot offer dine-in seating. All of our food is still available for pick up, though. To replace the deli sandwiches we’ve begun offering savory fillings baked into large puff pastry crusts that are sure to hit the spot!
